Let’s cook this magic in minutes!

Ingredients:

  • 5 tsp oil
  • 5 small onions
  • Curry leaves (a handful)
  • 2 ripe tomatoes
  • 1 cup green peas
  • 2 tsp chilli powder
  • Salt (to taste)
  • Mustard seeds
  • 1 tsp turmeric
  • Fresh coriander leaves (a few sprigs)
  • Half a lemon
  • 3 boiled and mashed potatoes
  • 1 glass of water

Method:

  1. Heat 5 teaspoons of oil in a frying pan. Once hot, toss in some mustard seeds, curry leaves, and 1 tsp of turmeric. Let them splutter, filling your kitchen with that irresistible aroma.
  2. Add 1 cup of green peas and stir them well until cooked, turning soft and bright green.
  3. Next, throw in 2 chopped tomatoes and add salt as needed. Stir everything together.
  4. Spice it up with 2 teaspoons of chili powder and mix well.
  5. Now, it’s time for the magic: add the 3 boiled and mashed potatoes. Let this settle for about 5 minutes so the potatoes can absorb all those flavors.
  6. Pour in 1 tea glass of water, stirring to create a beautiful, rich gravy.
  7. Finally, finish with a squeeze of half a lemon and garnish with fresh coriander leaves.
